General Tso Chicken Wings
General Tso’s-inspired chicken wing as seen on season 21 of Hell’s Kitchen episode 2.
Ingredients
- 1/2 c dark soy
- 3/4 c dry sherry
- 3/4 c rice vinegar
- 1 c chicken stock
- 1 1/4 c sugar
- 2 tbsp Sesame oil
- 1/4 c cornstarch
- 1/4 garlic, minced
- 1/4 ginger, minced
- 1/4 c scallion, white parts only
- 20 dried thai chili
- Chicken Wings
Directions
General Tso Sauce:
Heat 1 tbsp. Oil in a sauce pan. Sweat the garlic, ginger, and scallions for 3-4 minutes then add the chilis. Add the wet ingredients and corn starch and bring to a boil for 2 minutes. Reserve for use.
Chicken Wings:
Fry at 250 for 10-11 minutes. Strain and cool on a cooling rack. Bring oil to 375, toss chicken wings in cornstarch or potato starch and fry for 3-4 minutes. Strain and season with salt. Pour sauce over wings and toss to coat. Garnish with togarashi, furikake, crushed peanuts and chives.
