Cheddar Rillettes



  • 4 Tbsp. Melted Bacon Fat
  • 1 C Mayo
  • 1 Shallot, minced

  • 3 Dashes Tobasco or other hot sauce
  • 1 lb. Buttermilk Cheddar Cheese, Grated
  • Salt TT


Whisk together mayo, bacon fat, shallot, hot sauce, and salt until combined. Fold in cheese. Place mixture into food processor and pulse until cheese is very finely chopped and all ingredients are mixed well. Transfer to bowl and season to taste.
