
Carrot Sorbet
Ingredients
- 325 ml Carrot Juice
- 400 g Sugar
- 400 ml Water
- 50 ml Glucose
- 250 ml Lime Juice
- 4 Gelatin Sheets
Directions
- Boil sugar and water until sugar is dissolved and set aside to cool.
- Bloom gelatin in ice water for 5 minutes.
- Add softened gelatin to the syrup and then the remaining ingredients.
- Freeze in paco canister for at least 8 hours. Spin and refreeze.
